The Successful Candidate

This position is for an enthusiastic, experienced, hard-working professional Sous Chef with a passion for excellence.

The successful candidate is detail-oriented with solid techniques and a love of cooking. This IS NOT an administrative focused position. Working in a fast-paced environment is a MUST. The bulk of the work involves physical labor and standing on your feet. Must be available to work both daytime and evening, weekdays, weekends and holidays. Clear and effective social and verbal communication, attention to detail, and impeccable leadership skills are a must. The ability to manage and interact with staff in a fast-paced environment, while under pressure, remaining flexible, resourceful and efficient, is crucial to this role.

Duties And Responsibilities: but not limited to:

  • At least 2-5 years holding a sous chef or position of responsibility supervising people;
  • Preferred experience in a regional Italian cuisine and pizza experience;
  • Competent in all cooking techniques; including doughs, pastries and eggs;
  • Must be able to work calmly under pressure;
  • Preparation and accurate, consistent execution of menu items under the direction of the Osteria Chef de Cuisine;
  • Maintaining established standards for quality, service, safety, sanitation, and organization;
  • Maintaining a professional appearance, demeanor and work ethic;
  • Daily preparation duties as directed by the Chef de Cuisine;
  • Expedite line; work line stations during rush hours;
  • Ability to read, follow, and write recipes;
  • Make and write prep lists;
  • Supervises and assists with food preparation and production;
  • Responsible for ordering food and kitchen supplies;
  • Maintain proper inventory levels supplies; keep accurate records and accounts; put away products – FiFo
  • Ensures that company uniform standards are maintained in the kitchen;
  • Develops new menu items and recipes;
  • Basic kitchen math is a MUST;
  • Trains, supervises, motivates and schedules kitchen staff;
  • Ensures proper sanitation and food-handling procedures;
  • Responsible for food quality and plate presentation;
  • Ensures that service times for food are consistently met;
  • Ensures compliance with company food and plate specifications;
  • Communicates immediately with management regarding any customer problem or complaint;
  • Pays attention to customer and employee safety by helping to eliminate unsafe or hazardous conditions as they occur;
  • Cooperates with management by performing any other duties when asked to do so;
  • Completes paperwork accurately and on time;
  • Maintain a safe, efficient, sanitary, productive and clean kitchen according to company standards;
  • Uphold city, state and county health codes;
  • Be able to lead, teach, delegate, schedule kitchen staff;
  • Communicating clearly with owners, chef de cuisine, managers, BOH and FOH personnel and guests;
  • Working in a continuously-standing position for five or more hours, and working with hands continuously;
  • Upkeep, maintenance, and cleaning of kitchen equipment;
  • Understanding the importance of teamwork and a desire to be part of something special;
  • Frequent walking, lifting (up to 50 lbs.), carrying, reaching, back and wrist rotation and talking;
  • Occasional sitting, pushing, pulling, climbing, balancing, bending, stooping, kneeling, crouching and operating controls;
  • Culinary degree preferred;
  • Good computer skills;
  • Bilingual and Spanish a plus;
  • ServSafe Certification
